Dark Chocolate Peanut Butter Bites
Literally the easiest treat ever. Accidentally vegan and gluten-free. Definitely open to interpretation and additions. Not the most photogenic, but a definite crowd-pleaser.
Dark Chocolate Peanut Butter Bites
based on Dark Chocolate & Coconut Bites by We Eat. Happy.
Makes roughly 16
1/2 cup good quality dark chocolate chips
3/4 cup chunky peanut butter (or 1/2 cup peanut butter with at least 1/4 cup chopped peanuts)
1/3 cup maple syrup
3 tbsps. cocoa powder (recommend Hershey's Special Dark)
1 tsp. vanilla
pinch sea salt
- In a small pot, combine all ingredients and stir over low heat until everything is melted and combined (roughly 3 to 4 minutes). It will get relatively thick.
- Let cool for a few minutes, then use your hands to form them into roughly 1 tbsp-sized balls. Place on a plate or some over relatively flat surface (putting them on wax paper will also make life a little easier later).
- Cool in the refrigerator for at least 20 minutes. Eat right away or store in an air tight container (use wax paper between layers to keep them from sticking to each other).
