Thyme Simple Syrup and Related Cocktails
We have two herbs this year that think they're kings of the herb garden - oregano and thyme. They're just going gangbusters with no end in sight. The oregano... I really don't know what to do with. I mean, I like oregano, there's just no way I can use it that fast (psst, send me your ideas ASAP!). The thyme, however, I have plans for.
Thyme simple syrup can be used in cocktails, iced tea, or really any summer drink you like. I've heard of people who've used it on pancakes or toast or just poured over fruit, which I haven't yet tried but sounds promising! Either way, the thyme adds a subtle earthy flavor to whatever you choose to apply it to. I personally don't think you could go too far with the thyme here. The flavor can almost be too subtle at times, though you can certainly always add more thyme to whatever you're using it in if you think it needs more punch.
Thyme Simple Syrup
1 cup water
1 cup sugar
At least 5 large sprigs thyme, more to taste
- Heat all ingredients over medium in a saucepan, stirring occasionally, until boiling and sugar is completely incorporated.
- Remove from heat and allow to steep. At least 10 to 15 minutes - the longer you let it steep, the stronger the flavor will be.
- Remove thyme sprigs and transfer to an airtight container. Refigerate.
*As with any simple syrup, the real key is a proportion of 1:1 water to sugar. Increase or decrease the amount as desired as long as the proportions are equal. The amount of herbs really depends on how strong you want it to be.
Strawberry Thyme Daiquiri
3 or 4 fresh strawberries, halved or quartered
2 or 2 1/2 oz. light rum
3/4 oz. thyme simple syrup
Juice of 3/4 lime
- Combine all ingredients in a cocktail shaker and muddle strawberries.
- Add about 4 ice cubes.
- Shake hard and empty into a low ball glass. Garnish with sprig of thyme, optional.
Raspberry Thyme Daiquiri
*There are a lot of good uses of fresh raspberries, but this is a great use of frozen berries.
8 to 10 frozen berries
2 or 2 1/2 oz. light rum
1/2 oz. thyme simple syrup
1/4 oz. orange curacao
Juice of 3/4 lime
- Combine all ingredients in a blender. Pulse blender lightly until just combined.
- Pour over ice into a collins glass. Garnish with sprig of thyme, optional.
