Mint-Yogurt Sauce

Primarily a side dressing for lamb, it's all I can do not to eat this by the spoonful. I sometimes use it as a side with cold lamb and leftover rice to make a great cold salad.

Mint-Yogurt Sauce
adapted from The River Cottage Meat Book's "Real Mint Sauce"
3 tbsps. of yogurt
1 bunch of mint
1 tbsp. cider vinegar
1 tbsp. oil
1/2 tsp. sugar
1/2 tsp. mustard (coarse ground if possible)
salt and pepper

- Chop mint leaves finely.
- Combine all ingredients - best done if combined in a jar and shaken.
- Use as a side and enjoy!
