Braised Red Cabbage with Bacon



This became an instant favorite the second a friend brought it to dinner and took the lid off. 5 minutes of work (max), easy to scale up or down, insanely delicious.

1/2 lb bacon, diced
1 onion, diced
1 head red cabbage, shredded
1/2 c. apple cider vinegar
1/2 c. water
1/2 c. sugar

- Saute bacon and onion in a large pot over low to moderate heat until brown.
- Add red cabbage to pot, lightly salt, and stir together.
- Add equal parts vinegar, sugar, and water.
- Simmer on low heat 3 to 4 hours.
