Citrus Pulled Pork Tacos
How have I not posted about this yet??? This is one of our new favorite multi-meal solutions. Don't be fooled by the "taco" label - once the pork is pulled, you could make tacos, quesadillas, rice bowls, mix with beans, etc. Great topped with avocado, lime, cheese, and pickled onions or ginger. Easy and affordable, plus the slow cooker makes it perfect for the weekend.
Citrus Pulled Pork Tacos
3 lbs. pork shoulder - really whatever you can get size-wise, just adjust the rub accordingly and make sure you can fit it in the slow cooker
3 tbsps. kosher salt
1 tbsp. black pepper
1 tbsp. garlic powder
1 tbsp. onion powder
2 limes, zested (then use the remaining limes to make margaritas!)
2 tbsps. oil (preferably vegetable or canola)

- Combine salt, pepper, garlic powder, onion powder, and lime zest.
- Rinse and pat dry pork. Cover with spice rub, putting aside just a little bit for seasoning later.
- Heat oil in a large saucepan over medium-high. Once the oil is hot, sear pork shoulder on all sides, about 4 minutes on each side.
- Place rub-covered pork shoulder in the slow cooker and almost cover with water.
- Cook on low heat for 8 to 10 hours.
- Remove shoulder to a Pyrex cooking pan (or something else with edges, a wide pot would work fine). Use forks to shred pork. Sprinkle over remaining rub and spoon some sauce from the slow cooker over the pork. Assemble as tacos, or whatever. Yum.
