Easy, fast, summer. That's about all you need to know about this dish.
Grilled Porkchops with Garlic-Lime Sauce
1/6 - 1/4 cup fresh lime juice (2 - 2 1/2 limes)
2 garlic cloves (finely minced or pressed)
1/6 - 1/4 tsp. chili powder
1/4 tsp. salt
1/4 cup olive oil
3-4 basil leaves (depending on size) coarsely chopped - this is perfect if you have a basil plant on hand
2 boneless pork chops
- whisk together lime juice, garlic, chili powder, salt, olive oil, and basil.
- use half to marinate pork chops for about 20 minutes.
- start rice (I usually do 3/4 rice and 1 1/2 water)
- after 20 min, grill porkchops as desired - shouldn't take very long at all
- pour remaining marinade over chops and rice
