Orange Cake


Orange Cake


1 stick unsalted butter
3/4 c. sugar
4 tsp. candied orange peel
2 eggs
1/2 c. sour cream
1/4 c. orange juice
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. baking powder
1 1/2 c. flour

Tools:
hand mixer
spatula
whisk
two 4.5x8.5 baking pans, sides greased and bottoms lined with greased wax paper
* could use one larger 9x5 baking pan, but account for longer baking time

- Preheat oven to 350 degrees.
- Use the hand mixer to combine butter, sugar, and orange peel until creamy.
- Beat in eggs, one at a time, until smooth and combined.
- Whisk in sour cream and orange juice.
- Whisk in remaining dry ingredients until combined.
- Use spatula to split into two pans.
- Bake at 350 for 25 to 30 min until golden brown.


* I must must learn how to make my own candied orange peel, it can get expensive to buy. Any ideas out there?
